Chispa: The Taco Chronicles, Guisado
Mark your Calendars! The last of our six-part series of monthly taco pop-ups, featuring the culinary skills of our beloved Eduardo Balbuena, is happening on January 12th.
We’ll be open from 11:30am until sold out with our full Chispa menu available throughout. Reservations are not necessary – this will be first come, first served.
Guisado has been called the Mexican version of a one-pot meal. Slow-cooked stew makes its way into tortillas for the final volume of our taco series, and Eddie is pulling out all the stops with MANY versions of Guisado. Chicharron guisado pork, pork chile verde with salsa negra, and chicken tinga will delight our meat lovers, and for the veggie fans we’ll have a huevo guisado of eggs, salsa, and queso fresco (Eddie’s version of huevos rancheros!) and a luscious cactus salad with tomatoes, onion, and garlic. There’s a Guisado taco and Chispa cocktail for everyone, so come raise a glass to our Eddie for all his hardwork and dedication, bringing this taco series to life for our sweet community.
