Chispa Taco Chronicles: Guisado

Volume six of Chispa’ taco series features guisado on Sunday, Jan. 12 from 11:30 a.m. to 10:30 p.m. Guisado has been called the Mexican version of a one-pot meal. Slow-cooked stew makes its way into tortillas for the final volume of the Taco Chronicles. Eddie Balbuena is pulling out all the stops with many versions of guisado. Chicharron guisado, pork chile verde with salsa negra and chicken tinga will delight meat lovers.  The veggie fans can enjoy a huevo guisado of eggs, salsa and queso fresco (his version of huevos rancheros) and a cactus salad with tomatoes, onion, and garlic.  There’s a guisado taco and Chispa cocktail for everyone, so come raise a glass to Balbuena for all his hard work and dedication, bringing this taco series to life for our community.
